~Serves 2~
4 cups no salt added vegetable stock
1/2 cup lentils
2 stocks celery diced
2 cloves of garlic chopped
1/4 cup chopped carrots
1/2 cup onion chopped
1 can no salt added fire roasted diced tomatoes
pinch of black pepper, red pepper flakes, and all purpose seasoning
Handful of spinach to top.
These are the spices I used.
Saute onion, carrots, celery and garlic in the sauce pan until just browned. Add in can of diced tomatoes, lentils, and vegetable broth. Bring to a boil and then reduce heat to low and simmer for 1 hour or until the lentils have softened.
When the soup is finished, top with spinach and enjoy!
